vegetableUlluco (Ullucus tuberosus) is a scrambling herbaceous plant native to the Andes that grows up to 50 cm high and produces starchy tubers below ground. One of the most economically important root crops in the Andean region, second only to the potato, it is valued for both its brightly colored waxy tubers (in yellows, pinks, and purples) and its spinach-like leaves, both of which are edible.
Prefers well-drained soil; adapts to various soil types but performs best in fertile, loose soils
