Yacon is a perennial herb in the Asteraceae family, traditionally grown in the northern and central Andes for its crisp, sweet-tasting tuberous roots. The plant grows up to 2.5 meters in height and produces roots with a texture and flavor similar to jícama, with slightly sweet, resinous, and floral undertones due to the presence of inulin.
