Ramps are a spring ephemeral perennial in the amaryllis family native to rich, moist deciduous forests of eastern North America. They are one of the earliest edible plants to emerge in spring, with 2-3 tulip-shaped leaves growing from a conical bulb, followed by clusters of small white flowers on leafless stems. The plant has a distinctive strong garlic and onion fragrance and can be distinguished from poisonous lookalikes like lily of the valley by this aroma.
