Black salsify (Scorzonera hispanica) is a perennial plant in the Asteraceae family, commonly grown as an annual or biennial root vegetable. It develops a long cylindrical taproot with a brownish to black cork layer; if harvested young, the roots are tender and tapered with shiny white flesh that contains milky latex. The plant reaches about 60 cm in height when flowering, producing yellow ray florets on terminal flower-heads, and is native to Southern Europe.

Direct-sow Black salsify outdoors about 4 weeks after your last frost. Seeds usually come up in around 14 days. Grow in full sun, spaced about 15 cm apart. Expect to harvest in roughly 180 days.
