Water spinach (Ipomoea aquatica) is a semi-aquatic tropical plant grown for its tender shoots as a vegetable. The plant grows with stems 2–3 metres or longer, rooting at the nodes, with hollow cavities that make it buoyant. Its leaves are typically arrowhead-shaped (sagittate) to lance-shaped, 5–15 cm long and 2–8 cm broad. The flowers are trumpet-shaped, 3–5 cm in diameter, usually white with a mauve centre.
