Winter squash is an annual fruit representing several species within the genus Cucurbita, characterized by odd-shaped, rough or warty varieties with long-keeping qualities and hard rinds. They are harvested and eaten in the mature stage when seeds have matured fully and skin has hardened into a tough rind, allowing storage for winter use.
