Annual Clary
A beautiful plant for flowerbeds that also bings an extra flavour in the kitchen. Used like sage; the petals are excellent in salads and desserts. Can also be dried for tea. A sweet, attractive plant, suitable for borders and pots. Sowing indoors: March – May. Broadcast sow; do not cover the seeds with soil. Pinch back the plants for a bushier habit. Harvest: Blooms July – October.
Broad Bean
After being cultivated in North Africa and Southwest Asia, it has spread across the globe. It was grown in Sweden as early as the 13th century and remained a common vegetable until the 1940s. The beans are excellent when blanched for use in salads and pasta dishes, or boiled in soups and stews. Harvest as the pods swell. Use blanched in salads, pasta dishes, and stews. They can also be dried and soaked for later use. Sow directly outdoors once the soil is workable. It is best to sow in batches, spaced one or two months apart. Water the soil before sowing and keep it moist during germination. If black aphids appear, trim off the tops of the plants after flowering. Harvest as the pods begin to hang downwards. Amaranth
A beautiful, classic cut flower where the entire plant is actually edible and delicious! Easy to grow; it looks great in both flower beds and vegetable patches. The leaves are tasty and nutritious, used in cooking much like spinach. Dried seeds can be used in soups and stews, roasted, or used like sesame seeds. You can also make porridge from the seeds; boil them for 30 minutes in twice the volume of water. Outdoor sowing: June–July (cook the seedlings that are thinned out). Indoor sowing: April; requires light to germinate, so do not cover the seeds with soil. Harvest: Harvest leaves continuously. Position: Sunny Height: 120 cm
