Root parsley is a biennial vegetable cultivated for its edible taproot, which resembles a parsnip with a white or pale yellow color and parsley-like flavor. The plant produces fern-like green foliage above ground and develops a swollen, nutrient-rich root below that can reach 20–25 cm in length.

Start Root parsley indoors about 6 weeks before your last frost, keeping seeds in cooler soil (around 10–18 °C). Seeds usually come up in around 21 days. Move seedlings out once the danger of frost has passed, in full sun, spaced about 15 cm apart. Expect to harvest in roughly 120 days.
