Romanesco broccoli is a cultivar of cauliflower (Brassica oleracea var. botrytis) characterized by its striking chartreuse color and natural fractal form. The inflorescence displays self-similar spiral patterns arranged according to Fibonacci numbers, with each bud composed of smaller buds in logarithmic spirals. It has a nutty flavor and firmer texture than white cauliflower or broccoli when cooked, and is rich in vitamin C, vitamin K, dietary fiber, and carotenoids.
